If you’re like me you really enjoy delicious food that doesn’t make you feel guilty after eating it. Well, if that’s the case these spring rolls are for you because they are delicious, light and healthy!
With a few simple ingredients, you will be able to enjoy this tremendously good and power-packed food. After trying this I would feel safe in saying that you will definitely want to add it to your weekly menu rotation to create over and over again.
This recipe is also a great one for my amateur chefs. I have to admit I have always been a bit intimidated by the thought of making spring rolls using rice wrappers but being the risk taker that I am I couldn’t let it get the best of me.
To my surprise, with just one or two tries I got the hang of rolling up the spring rolls and was whipping through making one after the other like a pro. This recipe is also very versatile, meaning the ingredients that you can add are endless. So if you want to add or switch out one of the ingredients that I have listed below, please feel free to try different things.
It just so happens in my opinion that the ingredients that I’ve used in this recipe I believe made for the perfect spring roll.
The ingredients for this spring roll has so many healing properties:

Red Bell Pepper – contains more than your daily dose of vitamin C, has vitamin B6 and folate which help prevent anemia and also help with support healthy vision. Benefits of Red Bell Pepper
1 cup Shredded Carrots
1 cup Red Cabbage
1 small bag Spring Mix Lettuce
1 Red Bell Pepper
Ginger (I used ginger paste)
14 oz Tofu (optional)
Once you gather all the ingredients you will want to shred the red cabbage, carrots, red peppers and cucumbers as you see in the picture above.
Being a vegetarian I decided to add in some strips of tofu that I prepared ahead of time in a skillet sprayed with some olive oil pan spray. I used firm tofu that was drained and cut in strips. Season the tofu to your taste and place in skillet and brown on each side of the tofu strips, and set aside once done.
I would imagine if you’re not a vegetarian and would like to add some meat such as grilled chicken strips you could do that as well. However, please note that without the added tofu the spring rolls tasted just as great!
After preparing the filling ingredients you will need some warm water to soften the rice wrappers. I found the rice spring roll wrappers that I used at Walmart and have provided a link for the spring roll wrappers here.
Follow the directions on how to soften the spring roll wrappers but for the amateurs like myself a word of advice. Do not use boiling hot water or allow the wrappers to sit in the warm water no more than 10 – 12 seconds. I used a big mixing bowl to put my warm water in and then place the wrapper in that.
Take the wrapper out of the warm water trying to keep it from folding in on itself and lay it down flat on a hard surface.
Fill the wrapper with the shredded ingredients and start to roll your spring roll using the same technique you would as if rolling up a burrito. I found that the spring roll wrappers were very forgiven and only tore if I tried to add too much filler or my tofu was still too hot from the skillet.
Once you finish rolling the spring roll set it aside and start over from step 1 placing another wrapper in the warm water and adding the filler again and so on and so on.
Peanut Sauce Ingredients:
Mix all the ingredients for the peanut sauce in a bowl and its ready to serve. Now in regards to the quantities, the first time I made it I used 1/2 cup of peanut butter. Which I didn’t particularly care for, so the next time I made it I used 1/4 cup of peanut butter and added the rest of the ingredients to the consistency and taste I wanted my peanut sauce to be.
This recipe is fun because you can make all the adjustments you want and not necessarily ever mess it up.
And that’s it after completing these easy steps you have officially made The Perfect Spring Roll!
